Castro y Gonzalez is located in the famous Salamanca in the province of Guijuelo, a city that is full of renowned ham cellar.
After the finest cuts of pork have been selected, they are marinated in a special blend of Mediterranean spices, like the Spanish paprika that gives this cured sausage its classic red coloring. Then the sausages are naturally cured over a period of 3-4 months in natural drying sheds.
