The dover sole is a little flat fish. Its stomach is white while the other side takes the color of the seabed, which acts as a kind of camouflage battledress. Its flesh is one of the most fine and delicate. It is a tradition to serve the dover in the Meuniere way but it can also be stuffed, rolled or pan-fried.
