Smoked baby eel fillet
Eel filet is smoked traditionally in Dutch-style. These angulas are extremely rare due to its conservation restrictions in Europe. It is definitely a rare delicacy – pink flesh, firm and slightly fatty texture.
Best enjoyed with simple mixed greens, a lovely sourdough bread or anything starter creation that you can possibly think of!
