The geographical area for the “Agneau de Crau” appellation is located in the Bouches du Rhône department. The production area corresponds to the cradle of the Merino d'Arles breed.
They are called "brass", is fed exclusively with milk from its mother (dairy breed sheep)
Its flesh, white or slightly pink, with a mild flavor, is fine and tender. Its grain is tight, its fat is firm and white and its joints are still cartilaginous.
